Ingredients
4 sweet Italian Sausage Links
2 Medium Zucchini, sliced diagonally into 1/2-in-thick slices
2 Roma Tomatoes, halved lengthwise
4 Hot Dog Buns
1/2 cup Peach Mango Salsa
Mustard for topping (optional)
Directions

1. Prepare outdoor grill for direct grilling over medium-high heat. Place sausages on hot grill rack; cover and cook 15 minutes or until internal temperature reaches 160°, turning frequently. About 8 minutes before sausages are done, place zucchini, tomatoes and buns, cut side down, on hot grill rack; cook zucchini and tomatoes 8 minutes, turning once, and buns 2 minutes or until grill marks appear.

 

2. Place salsa in small dish in center of large serving platter; arrange sausages, zucchini, tomato and buns around salsa along with ketchup and/or mustard, if desired.

 

3. Chef's tip: Customize this dish by serving platter-style with turkey or plant-based links, and adding more seasonal vegetables like corn and fresh peaches!
